I prefer to cook things that are fast and easy, particularly when I’m already hungry. One of the easiest and yummiest things to make is quesadillas. These tasty bites are also great for a crowd, as each person can assemble their own to suit their tastes.
Quesadillas are flexible and easy, meaty or veggie, extra-cheesy or less cheesy. Personally, I go for the meatless, cheesy variety. Sometimes cheesier than others. But what I love most about quesadillas is that I almost always have enough ingredients on hand to assemble some form of ‘dilla. So rather than a “real” recipe, here’s another template you can use, full of suggestions for fillings and cheeses, to give you ideas to assemble your own. The best part? They take 10 – 15 minutes to make!
Tortillas, 8 inch or larger
Cheese – try mexican cheese mixes, or go with mozzarella or cheddar, or whatever is your favorite!
Sautéd onions, garlic, and bell peppers
fresh, frozen, or cooked spinach
sliced fresh tomatoes
beans, black or pinto, but other types will work just as well
corn, fresh or frozen
grilled fajita meats
grilled squash or zucchini
roasted red peppers
Heat up a large non-stick skillet or a grill pan/griddle. If, like me, you don’t have a non-stick skillet, put a little oil i the bottom of your pan.
Place one tortilla down on the hot surface, pile on your fillings, and put on the other tortilla. After a few minutes, flip it over and continue cooking until the cheese is melted and it smells delicious.
Cut into wedges and eat. Garnish and enjoy with sour cream or guacamole.
Tonight ours consisted of sautéd onions and garlic, black beans, corn, and mozzarella cheese on whole wheat tortillas. They were so good!
