Dijon Chicken Marinade

We eat a lot of chicken in our house. In fact, chicken breast is a staple of our regular diet. But sometimes you want it to have a bit more flavor but not take more time to make. That’s one of the wonderful things about marinades. They take about 2 minutes to whip together before you leave for work, and you have seasoned chicken ready to grill when you get home.

Juice of 1 lemon
Juice of 1 lime
1 tbs grill seasoning (optional, it’s high in salt)
1 tbs Dijon or whole grain mustard
2 tbs red wine vinegar
1/4 cup extra virgin olive oil

Emulsify the ingredients in whatever is you favorite method – whisk, fork, shake it up, Magic Bullet, they all work. Place 4 – 6 boneless skinless chicken breasts in a plastic bag or large sealed container, pour marinade over chicken. Shake it all around until the chicken is coated on all sides. Stick it in the fridge and let is sit at least an hour, or make it in the morning and let it sit all day while you’re at work.

Throw it on your Foreman Grill like we do, or your outdoor grill if you’re lucky enough to have one. These are great by themselves, but would make a fantastic sandwich or be great on a large salad. I also think the marinade would go equally well with pork as with chicken.
