Crock Pot Chicken Stew

I love my crock pot. The easiest way to have a meal ready for you when you get home is to spend 5 minutes in the morning throwing a bunch of stuff in a slow cooker and turning it on. Plus, it almost always comes out delicious.

One day I had a group of ingredients, threw it together, added some seasonings, and went to work. When I came home and GP and I ate dinner, it was so good I had to write down the recipe right then. Here’s what I did:

Ingredients:
1/2 each red, yellow, and orange bell peppers
1 whole onion (preferably white or yellow, but I used purple this time)
3 cloves garlic, smashed
1 can chicken broth
1/2 cup red beans or lintels
1 (10.5 oz) can stewed tomatoes
3 chicken breasts

Put all the ingredients except the chicken into the slow cooker. Add:

1 – 1 & 1/2 tsp Paprika
1 tsp Cumin
sprinkle of Grill Seasoning
pinch salt, few shakes of pepper

Mix it all together, and lay the chicken across the top. Turn on high, and put on lid. Chicken will be done in 4-5 hours, and should fall apart when you stir the stew. Serve with fresh sweet cornbread, because everything is better with cornbread. And lots of butter!
